Try this crunchy juicy and refreshing summer salad, abundant in micronutrients, protective antioxidants, whole-body supporting fibre, and water-rich veggies to support cellular hydration and circulation.
To make
Gather up some fresh colourful, water-rich plant foods such as bell peppers, tomatoes, cucumber, lettuce, watercress, pomegranate and radishes. Chop/dice everything finely add to your bowl and add the pomegranate arils. For the dressing finely chop up 1/2 cup of fresh mint, 1/4 clove of fresh garlic, add a pinch of salt and coarse ground black pepper to a 1/3 lime juice to 2/3 extra virgin olive oil base.
